It is twisting because of the way the thread is wound on the ball. If the ball doesn't move when you pull the thread, the thread will always twist as it comes off. Have you checked on Ravelry.com? They have thousands of patterns for both knitting and crocheting, plus there is the ability to socialize with and learn from other stitchers all over the world.
